Wash the meat, cut into pieces and put in cold water.

Bring to a boil and foam will rise to the surface.

Skim off the foam with a spoon.

Blanch the meat and add the soup to the wok; add soy sauce, sugar, salt and green onions, bring to a boil, then simmer over low heat.

Boil the eggs, peel and set aside.

After the meat has cooked for an hour, add the prepared eggs to the pot.

Continue to cook for another hour or so, being careful not to dry out the pot.
