Cut the king oyster mushroom into slices, then cut into cross cuts on both sides.

After cutting the king oyster mushrooms, blanch them in a pot of boiling water. I like to blanch mushrooms first before cooking.

Mince onions and garlic and set aside.

After blanching the king oyster mushrooms, pour them into cold water to control the moisture, and then put them directly into the wok to boil them dry.

Then add peanut oil and fry both sides until golden brown.

Add light soy sauce, chopped green onion and ginger, and add a little water to make the light soy sauce color more evenly. Stir well and serve.
