Wash and cut the straw mushrooms.

Wash and dry the rapeseed.

Bring water to a boil in a pot and add a pinch of salt.

Add the rapeseed, blanch until soft, remove and place on a plate.

Blanch the straw mushrooms and remove them to remove the oxalic acid.

Put oil in the pot and stir-fry the minced onion and ginger until fragrant.

Add the blanched straw mushrooms and stir-fry.

Add salt and sugar to taste.

After the soup is ready, add starch to thicken it.

Pour the straw mushrooms and soup over the rapeseed and serve.
