Purple Sweet Potato Snowskin Mooncake and Lotus Seed Snowskin Mooncake
Overview
I love snowskin mooncakes! Because the operation is simple and fast. It also tastes good and doesn’t get irritating! This is my first time frying purple sweet potato filling this year. I like the color purple, it looks so comfortable! Try purple and white this time, and two more colors to mix! This time the prescription given by my classmates was still firm and cracked even on the fourth day!

Steps
-
Weigh the various raw materials. Rice flour/rice flour/glutinous rice flour/sugar powder can be weighed together directly, and condensed milk and corn oil can be weighed together. At the same time, prepare a pot of water to boil. Mix the ingredients together step by step while boiling the water.
-
Pour pure milk into the mixed four kinds of powder (rice flour/glutinous rice flour/glutinous rice flour/sugar powder).
-
Use a hand mixer to mix evenly. The powder will be a little lumpy when you first mix it. Stir slowly and it will mix with the milk.
-
Then add corn oil and condensed milk and mix well until corn oil is no longer visible. (If you don’t have corn oil, you can use salad oil or other tasteless oil. Do not use olive oil and peanut oil).
-
There is a little trick for mixing oils (do not touch the bottom or edge of the bowl with the manual egg beater, and shake it in circles. You will see that the oil floating on the surface will gradually disappear, and the milk liquid will be mixed evenly).
-
Mixed ice cream.
-
Pour the ice skin liquid into a large flat dish (it is recommended to use ceramic ones to heat evenly, it is best not to use stainless steel, and the bowl should not be too deep. I use a large dish for vegetables, which is easier to use and steams faster).
-
When the water is boiling, put the ice skin paste into the pot and steam it. Remember to cover it with plastic wrap. It takes about 20 minutes to steam. Each steamer has different firepower, so you can control the time according to your own steamer.
-
Purple sweet potato filling fried by yourself. (I will sort out the fried stuffing when I have time)
-
Fried lotus paste filling yourself. (I will sort out the fried stuffing when I have time)
-
While the ice skin is steaming, weigh out the filling (I used a 50G French bakery mold, and the 1:1 filling of 25G ice skin means 25G). This recipe can make 17 pieces.
-
Steam until there is no liquid in the ice cream batter. A layer of oil will appear on the surface of the batter after steaming. This is normal and will be absorbed when you knead it. After the ice skin is steamed and taken out of the pot, in order to allow it to dissipate heat evenly, use chopsticks to break it up and set it aside to cool slightly.
-
As long as your hands are not hot, you can knead the ice dough. Add half of it with purple sweet potato flour and knead it into purple. Be sure to wear gloves to prevent it from sticking. Knead the oil that just floated on the surface into the dough. The technique is the same as kneading bread. It will be kneaded in quickly. It is best to knead when it is still warm.
-
Kneaded white and purple ice skin balls.
-
Ice skin balls are weighed at 25G each and can be purple alone/white alone/both colors together.
-
Take a piece of ice skin and flatten it with your hands.
-
Wrap in stuffing.
-
All wrapped snowskin mooncake balls.
-
French bakery mooncake mold, this mold is easy to use this time, it doesn’t use cooked flour and it won’t stick to the mold. And the finished products are so beautiful!
-
Beautiful purple sweet potato, these little flowers are very three-dimensional and beautiful.
-
I couldn’t get the best results when taking pictures of the white one with my phone, but it’s actually beautiful.
-
Come on, have a two-color one!
-
Place it under a cupcake paper coaster, place it in a cookie box, and chill it in the refrigerator for a better taste!
-
Putting mooncakes in blister boxes is very decent for giving away.
-
Cut full of purple sweet potato filling.
-
Lotus paste filling. The skin is elastic and the filling is soft and fragrant!
