Overview

It was my first time to completely DIY from custard filling to steamed buns. It took several hours and finally came out successfully. After taking pictures, I tried it with my husband. I was very happy. It tastes the same as the custard buns bought in the supermarket. If you want to eat custard buns in the future, you can make them anytime. It’s great~

  1. This is a homemade custard filling, made by mixing 40g butter, 25g milk powder, 75g caster sugar, 80m whole egg liquid, 10g wheat starch, and 10g custard powder. Mix evenly with a food processor and steam for 30 minutes (stir every 10 minutes during this period). Divide into 25g portions and prepare 10 portions in total!

  2. Add 140 grams of water to the bread barrel, then add 250 grams of all-purpose flour, make a small hole in the middle and add 3 grams of dry yeast. Start the kneading program for 30 minutes.

  3. After the program is finished, take it out, apply a little oil on the chopping board, knead it into a smooth dough, then put it into a deep plate, cover it with plastic wrap, and let it ferment in a warm place until it is two cups in size.

  4. Remove the air, divide into 10 portions, roll into balls, cover with plastic wrap again, and let rest for 15 minutes.

  5. Then use a rolling pin to roll the dough into a round shape, slightly thicker in the middle and slightly thinner at the edges, just one circle larger than the filling.

  6. Place the filling in the middle of the dough sheet.

  7. Tighten and wrap into a round bun with the seam facing down.

  8. Pour cold water into the pot.

  9. Steam over high heat for 20 minutes, then simmer for about 10 minutes.
