Steamed and smoked winter bamboo shoots and bacon
Overview
The steaming method for this dish may be more suitable for my family's taste. First clean the bacon, blanch it in water twice, then stir out the oil from the bacon and steam it in a pot. This dish doesn't taste greasy.

Prepare the bacon, clean it and blanch it twice.

Ready to be smoked and dried.

Cut the smoked jerky into thick slices.

Cut the processed bacon into thick slices.

Slice winter bamboo shoots.

Chop green onions and ginger.

Leave the oil in the pot over low heat and sauté part of the onion and ginger until fragrant.

Add Laoganma black bean paste and stir-fry until fragrant.

Add bacon and stir out the oil.

Take an empty bowl and put the sliced winter bamboo shoots on it.

On the second layer, put the sliced smoked dried slices.

Place bacon on the third layer.

Filled in order.

Finally add the cooking wine and sprinkle with the remaining green onions and ginger.
