Overview

Do not add water to the pineapple, puree it directly with a blender

Pour the puree into a milk pan (non-stick pan is best)

Add sugar to the fruit puree and heat over low heat

Mix part of the white sugar and apple gum into the puree

Continue to heat and stir, being careful not to burn the bottom of the pot

Then add maltose and continue stirring

Heat until the puree becomes translucent and bubbles. The thermometer measures approximately 107°C. Squeeze in a little lemon juice and turn off the heat

Pour the puree into the mold and smooth it out with a spatula. You can also pour it directly into a flat plate and let it cool at room temperature overnight

After unmoulding, sprinkle with caster sugar to prevent sticking
