Mix 100g each of high flour and low flour, 3g salt, and add 120g softened diced butter

Slowly add water and mix into a dough. At this time, the dough is relatively thin and very sticky. You have to be patient. After kneading for ten minutes, it will basically form a ball and not very sticky. Place in the refrigerator for half an hour. The dough in the picture is what it looks like after being refrigerated

While the dough is chilling, you can prepare the apple filling. Peel, core and dice the apples along with the toast.

Heat the pot, add 20g of butter, and cook until it changes color.

Add diced apples and 50g white sugar.

Stir-fry constantly until the apples become soft and the water content becomes reduced, then turn off the heat. Pour in diced toast.

Mix well.

Fry the apple filling, and while the filling is cooling, you can roll out the pie crust. Roll the pie crust into a rectangle.

Press the left and right thirds onto the middle third. Then rotate it 90° as shown in the picture. Roll it out again

Repeat the action 2-3 more times. Then roll it into a square shape with a thickness of about 4-5mm.

Place on the pie plate and press gently along the bottom edge of the pie plate to fit. Then roll a rolling pin around the top of the pie plate and roll off the excess pie crust.

Poke holes in the prepared pie crust.

Place the cooled apple filling onto the pie crust and press lightly.

Use the rolled out pie crust to roll it into a rectangle again and cut into long strips about 1.5cm wide. Arrange the apple filling first.

Brush with whole egg wash. Preheat the oven to 200 degrees for 5 minutes, place the grill on the middle and lower racks, and bake for about 25-28 minutes.
