Scallion oil noodles
Overview
Scallion oil noodles are a very simple and very delicious noodles. It's so simple that you only need to fry the scallions in oil at once, and you can have scallion oil noodles at any time. The seasonings are also as simple as soy sauce and sugar. When eating, throw the noodles into boiling water and cook, cool the water, then mix it with scallion oil, soy sauce and sugar, and you can enjoy a delicious bowl of noodles. Scallion oil noodles are originally a bowl of smooth noodles, but I personally cannot eat noodles without green vegetables. Moreover, it is the season for picking noodle vegetables, and wild vegetables are out of season, so I blanched some noodles and put them on the bottom. Personally, I still like scallion oil noodles with some green vegetables. If I don’t like to add green vegetables, just ignore the green vegetables step

Wash the shallots and separate the leaves and whites

Put oil in the pot, cut the green onion into sections, heat the oil to 40% heat and add the green onion leaves

Fry slowly over low heat so that as much of the aroma of the onions as possible can be incorporated into the oil

When the green onion leaves are fried until brown, remove the green onion leaves. No more green onion leaves.

Then add the scallions and continue to fry slowly over low heat

Remove the scallions when they are white and brown, and the scallions are fried. The whole process of frying scallions in oil took me 1 hour. Be sure to use low heat!

Take 1 tablespoon of scallion oil

Then add 1 spoon of light soy sauce, half a spoon of dark soy sauce and a little sugar, stir evenly

Blanch the noodles in boiling water until cooked and take them out

The noodles are cooked. For this noodle, you can use slightly thicker thin round noodles, or other noodles. The main thing is to choose chewy noodles. The shape depends on your personal preference.

Pour the cooked noodles into cold boiling water, take them out, add them to the scallion oil sauce and mix well

The blanched noodles are served as the base
