Wash the ribs and cut into small pieces and drain the water.

Add salt, dark soy sauce, cooking wine, minced ginger and garlic to the pork ribs, then add glutinous rice flour and stir together to marinate.

Peel and wash the potatoes and cut them into chunks. Rinse out the starch and put it into a pot, cook for seven minutes, remove and drain.

Put the drained potatoes into a hot oil pan and fry until the surface is golden brown. Remove from the pan and place on an iron plate.

Place potatoes on the bottom, rice noodles and meat on top, then put it into the steamer and steam for half an hour.

Remove from the pan and sprinkle with chopped green onion and serve.
