Overview

It is said that duck soup is good to drink in summer. Perhaps the advantage of being a small county is that you can buy fresh ingredients with confidence. A friend bought the old duck from the mountains (it is said to be very old, but the master who killed the duck said it was only one or two years old). It was stewed slowly for more than five hours in an old rural stove with firewood. Fortunately, the duck soup is worth a few hours of work.

  1. Soak the dried bamboo shoots and mung beans in appropriate amounts of water, and boil the duck meat in water (because I was too busy to take pictures)

  2. The stew ingredients are prepared by myself at the vegetable market. This bag is enough to stew the soup several times. It is probably Codonopsis, Danggui, Star Anise, Cao Guo and so on. Heat the oil in the pot, then pour in the seasonings, stir-fry the sour radish over high heat, and add the cooking wine at the same time. The fried duck meat is browned on the surface.

  4. Add water, add mung beans and dried bamboo shoots. After the high heat comes to a boil, reduce the heat to low and simmer. After the duck meat is cooked, quickly remove the pot and add the winter melon.
