Cut the eggplant into cubes.

Finely mince the garlic.

Heat oil in a hot pan, add sweet noodle sauce and minced garlic, stir-fry until fragrant.

Add the eggplant and stir-fry over high heat.

Cover the pot and simmer for a while. If the eggplant is very dry, add a little water and simmer again.

Add some shredded green pepper. After it's cooked, add an appropriate amount of salt and stir-fry to taste. If the sauce is salty enough, you don't need to add any salt and serve on a plate.
