Because it is excavated before it is unearthed, the freshness, crispness and tenderness of its meat are definitely not comparable to bamboo shoots in other seasons! Today I worked very diligently to help my mother prepare her Chinese New Year stir-fry - stir-fried shredded pork with sauerkraut and winter bamboo shoots! The sauerkraut pickled by my mother-in-law is used, paired with lean pork, a little more oil is put into the pot, the three are simply stir-fried, a little sugar and a little salt are added, and the delicacy of the world is born!

Wash the pork and cut into shreds.

Wash the sauerkraut, squeeze out the water and cut into pieces.

Peel off the shell of winter bamboo shoots, wash and cut into shreds.

Add shredded ginger and shredded pork, stir-fry until shredded pork changes color.
