Overview

Today I finally broke through and stopped making cookies (I guess everyone gets tired of seeing them every time I make them). I boldly tried to make a honey cake made with whole eggs. I followed Yuanzhuzhu’s video to make it step by step. Every step was done very carefully. (Actually, I was very uneasy. I had always heard that it was difficult to pass whole eggs, but I didn’t expect that it was quite successful in the end.)

  1. Prepare the ingredients and crack the eggs into a large, clean, water-free and oil-free basin. Add all the sugar and honey to the eggs. Use a hand mixer to beat evenly.

  2. Pour 1/2 amount of cold water into the pot, place the egg beating basin on the water, turn on low heat and start heating (the term is called water-isolated heating). While heating, stir continuously with a hand whisk until the egg liquid and sugar are evenly mixed.

  3. When the temperature of the egg liquid reaches 36 degrees, which is about human body temperature, remove the hot water and start beating with an electric egg beater.

  4. Turn on the egg beater at level 3 (medium speed) and beat for about 1 minute.

  5. After whipping, the bubbles are very large, the color of the egg liquid is yellow, and the volume of the egg liquid is slightly larger than the original (Picture 4).

  6. Continue beating at level 3 for about 1 minute. The egg liquid begins to expand to double its size. At this time, the bubbles become medium in size and the color is still yellow. When the egg beater is lifted up, the egg liquid immediately drips and cannot form a continuous forged ribbon shape.

  7. Continue beating at speed 3 for about 2 minutes.

  8. At this time, the volume of the egg liquid is no longer larger, but the bubbles have become smaller and the color has begun to slowly turn white. Continue beating on speed 3 for about 3 minutes. During the whipping process, the egg liquid will have some slight lines.

  9. At this time, the volume of the egg liquid remains unchanged, but the bubbles become very fine, and the color of the egg liquid turns white. Lift the egg beater, the egg liquid will be in the shape of a forged band, flowing from top to bottom, and the traces of falling will slowly disappear within 5 seconds. At this time, the whole egg beating is completed.

  10. First, use a flour sieve to sift 1/2 of the flour into the beaten egg liquid, then use a rubber spatula to turn it up from the bottom, and mix the flour and egg liquid roughly evenly. (Start preheating the oven to 180 degrees)

  11. Sift in the remaining 1/2 of the flour and continue to turn it up from the bottom with a rubber spatula until the flour and egg liquid are fully mixed and no granular flour is visible. (Pay attention to control the time, the egg liquid will defoaming if the time is too long)

  12. Mix 20 grams of corn oil, 20 grams of fresh milk, and 1/16 tsp of salt in another small bowl to form an emulsified liquid. Use a manual egg beater to stir until the oil and water are dissolved. Take 1/3 of the cake batter and add it to the bowl with salad oil and mix well. Mix well and then pour back into the remaining 2/3 of the cake batter and mix thoroughly with a rubber spatula. (Pay attention to control the time, the egg liquid will defoam if the time is too long). The cake batter that is finally mixed must be used immediately, otherwise it will defoaming.

  13. Pour the cake batter into the mold until it is 80% full. (You can use a spoon or pour it carefully)

  14. Baking time: Preheat the oven to 180 degrees, and set the middle rack to 160 degrees for 20 minutes.
