Prepare the pork belly.

Cook the pork belly (you can insert chopsticks into it), put it in a pot with cold water, and add cooking wine to the water to remove the fishy smell.

Prepare other ingredients and take out the cooked pork belly.

Cut the pork belly into thin slices, cut the green pepper diagonally, cut the garlic into small sections, and cut the rice pepper into small rings.

Heat oil in a pan. When the oil is 40% hot, add Sichuan peppercorns and stir-fry until fragrant, then remove the Sichuan peppercorns (I forgot to take a picture of this step).

Add bean paste.

Stir out the red oil.

Add pork belly and stir-fry evenly.

Scoop pork belly to one side.

Add chili and garlic and stir-fry until cooked.

Stir well and add chicken essence and oyster sauce to taste.

Remove from pot and plate.
