First, remove the bones from the chicken legs and cut them into pieces. The skin-on chicken legs will be more fragrant when fried.

Submerge the chicken with scallion powder, ginger powder, garlic powder, salt, beer, pepper, and sugar. Grip the chicken for a while to absorb the flavor. Finally, add a little egg liquid and starch powder to mix well.

Make fried chicken powder: Mix flour and glutinous rice flour in a ratio of 2:1, put the marinated chicken pieces into the fried chicken powder and wrap them evenly, shaking off the excess dry powder.

Put the shaken chicken nuggets into the pan and fry them. The oil temperature should be high. You can take them out when the oil blooms become smaller. Then when the oil temperature is higher, fry the fried chicken nuggets again until they are golden and crispy on the outside.

Take out the chicken pieces and immediately sprinkle with barbecue seasonings, and it's ready to eat.
