The usual way to eat phoenix snails is to boil them, but this time they are fried in butter

Simply rinse the shelled snails with clean water to remove the dirt on the shell

Use the back of a knife to crack open the shell and take out the snail meat

After removing the shelled snail meat, be sure to also remove the red part of the snail (the mouth of the snail) and the white salivary glands. These two parts are poisonous. Salivary glands can only be discovered after cutting the snail meat in half

Add salt to the cleaned snail meat, rub it briefly and then rinse it with water to remove the salt. This can remove the mucus from the snails and make them taste better when fried

After adding butter, add minced garlic, etc., then add phoenix snails and cook them, then add salt, pepper and other seasonings
