Chaoshan taro puree
Overview
This is a Chaoshan dessert made with meticulous care - smooth and tender, it melts in your mouth. Because the finished product looks like mud and is made of taro, it is called taro mud!

Peel one taro and cut it into four pieces, steam it in a steamer for 30 to 40 minutes until cooked.

Rub the steamed taro with the back of a knife repeatedly until it looks like mud without any particles.

Use about half a bowl of freshly fried lard, remove the oil residue (you will need more when making taro paste).

Slowly heat, add taro, and use a spatula to spread the taro puree in one direction, applying force repeatedly until it feels smooth (the longer you apply it, the better).

Add sugar and continue to spread until sugar is completely dissolved.

An authentic "Chaoshan taro puree" is finished. If you like the flavor of coriander or tangerine peel, you can chop it into pieces and add it, then mix well!
