Overview

This preserve is not a snack, its main function is for decoration. I borrowed a baking book from the library a few days ago. It was about making cup cakes. It also introduced some methods of decorating cakes. It was very interesting and I wanted to give it a try. It’s not difficult to make, but how to make good use of this carrot preserves takes a little effort. At first, I wanted to imitate the photos in the book, so I made a few cup cakes. Unfortunately, cup cakes are not suitable for my personality. Every time I made cup cakes, they would shrink and collapse, and they were hopelessly ugly. So I had to start a new oven and bake a pretty good chiffon to go with it. I couldn't wait to eat it after taking the photo. The candied carrot was quite amazing because it had been placed on the cake for a while and the syrup had basically dried. It was soft, chewy and sweet in the mouth, which was really good. This morning I put the remaining candied carrots in a crepe and ate it. It was also quite delicious. The baby carrot shape is a method in the book. How could a creative person like me not do something? I made roses out of it.

  1. Peel the skin off the carrots with a paring knife, and then cut into thin slices about 1 mm thick.

  2. Place the sugar and water in a non-stick saucepan and bring to a boil over high heat, stirring occasionally.

  3. After the water boils, add the carrot slices, cover and bring to a boil over high heat, then turn to medium heat and simmer for about 10 minutes.

  4. Cook until the carrot slices are soft and translucent and turn off the heat. Be careful not to let the syrup dry out. Boiled carrot slices are soaked in syrup and cooled.

  5. Take a carrot slice and roll it up. Carefully pull out the small roll in the center and slowly stretch it. Insert the mint leaves into the large roll. A cute little carrot is ready.

If the small roll in the center is not pulled out, but the big roll is pulled out, it will be the small rose on the top; or you can refer to "Apple Rose Egg Tart" on my homepage or public account "Meiji", cut out 7 to 8 petals and roll them up like making an apple rose, and you will be the big rose below.
