Bitter Melon Scrambled Eggs is a very common home-cooked dish made with bitter melon and eggs fried together. It has the effects of clearing away heat and detoxifying, increasing appetite and aiding digestion.

Cut the bitter melon in half, wash and cut into thin slices

Add water to the pot and bring to a boil, add a little salt and oil, add bitter melon and cook for three minutes

After cooking, drain and pour ice water to cool down (this can preserve the emerald green color of the bitter melon)

Drain after ten minutes and set aside

Crack the eggs into a large bowl, add a little salt and a little cold water and mix well with chopsticks

Hot pot, cold oil

Pour in the egg liquid and stir it up with chopsticks while heating

Fry the eggs and set aside

Add a little oil to the pot again, add the bitter melon and stir-fry for a while
