The beef balls in Shantou, Guangdong are very famous, and I always have them at home. My baby has been eating pasta for a few days, so I have to serve some rice today🤔. If the weather is too hot and you have no appetite, just eat soup and rice!

Marinate the pork slices with olive oil, chicken powder and salt and set aside. Cut the beef balls in half and set aside. Grate the loofah and cut into pieces with a hob and set aside. Rinse the mussels and soak them for half an hour, pick them up and set them aside. Soak the scallops for ten minutes, pick them up and set them aside.

Add ginger to two liters of cold water and bring to a boil over high heat. During this period, I used another stove to fry the eggs (no matter whether the eggs are raw or cooked, as long as they are browned on the surface). Of course, you can fry the eggs first and then boil the water in one stove. Put the fried eggs directly into the boiled soup and continue to cook. Sprinkle black pepper (I use freshly ground, a little more is okay), add beef balls, mussels, and scallops, cover and continue cooking.

After the water boils, cook for 5 more minutes. Add the loofah and soup stock (or a spoonful of chicken powder). Continue to cover the lid and cook for 3 minutes. When the loofah becomes soft, pour the marinated pork in and spread it with a shovel. If the pork changes color, add a small amount of salt and it is ready to serve.
