Peel the potatoes.

Cut the potatoes into strips and then into shreds.

Three. Soak potatoes in cold water.

Four. Bring the water to a boil, then remove the potatoes from the cold water, put them into the boiling water, and cook for 3-4 minutes.

Five. Leave the potatoes for a few minutes until the water has almost evaporated. You can use a paper towel to wipe off the water on the potatoes (if you don't put them in the refrigerator, ice will form)

Six. Put it in the refrigerator and take it out after half an hour (of course, the longer the better)

Seven. When the peanut oil is 70% hot, add the potatoes and fry until golden brown on both sides.

Eight. You can add some pepper and some tomato sauce.
