  1. Wash the shrimps, open their backs, remove the skin and heads, pat the shrimps flat with a knife to prevent them from curling during frying, and keep the tails of the shrimps

  2. Marinate with white pepper, salt, and egg white for a while. Dip in a layer of flour, then a layer of whole egg mixture, and finally coat with a layer of bread crumbs.
