Wash white jade mushrooms and shiitake mushrooms, cut into thick slices and set aside.

Clean the ribs, especially the remaining small bone fragments.

Heat oil in a pot, not too much oil, drain the pork ribs, fry over low heat, add onion and ginger slices, and cook with cooking wine to remove the fishy smell.

Fry both sides until slightly brown. Add enough boiling water to cover the ribs.

Remove the onion and ginger slices, add two drops of rice vinegar, turn to low heat and simmer for 30 minutes.

Skim off excess scum.

Add shiitake mushrooms and white jade mushrooms, and cook for another five minutes.

Just season with some salt and pepper.

Finally sprinkle with chopped green onion.
