Wash eggplant and tender pumpkin

Cut the eggplant into hob pieces, add a little salt and marinate for 10 minutes

Cut tender pumpkin into thick slices

Squeeze out the water from the pickled eggplant

Put oil in the pot, add eggplant and fry over low heat
