Overview

First, mix 725g of glutinous rice flour with water and mix well. The water is added twice, as long as the dough is even and smooth. When the dough is smooth, the water is not added. The excess water may not be added due to weather conditions to prevent the dough from softening.

Before kneading, prepare a pot or bucket of boiling water. When the water is almost boiling, we are kneading the dough. When the dough is kneaded and the water is boiling, we will put the pot down and cook the noodles

After the noodles are kneaded and the water is boiling, put the noodles in the pot and boil them. Divide them into pieces of about 50 grams each and put them in the pot. When all the noodles are cooked, take them out and cook for about 5 to 8 minutes

Then add all the remaining ingredients, glutinous rice flour, baking powder, baking soda, sugar, milk essence, into a bucket and stir evenly for about 10 minutes. (That is, while we are cooking the noodles, pour all the remaining ingredients into the dough mixer. When the noodles are cooked, take them out and pour them into the bucket to stir together.)

Sprinkle some dry glutinous rice flour on the table to prevent it from sticking to the table. Scrape out the noodles that have been mixed for 10 minutes, then scrape them out and shape into long strips, and cut into 300g pieces.
