Prepare the required ingredients and cut the eggplant into small pieces (cut according to personal preference)

Pour oil into a hot pan, add eggplant, and stir-fry evenly. When the eggplant is a little soft when pressed, you can remove it from the pot and set it aside. (ps: Don’t fry it too soft. In the next step, you need to add minced meat and fry it. It won’t taste good if it’s rotten)

Heat oil in another pot, add minced pork, minced garlic, and minced green onions and saute until fragrant

Then add the eggplant and stir-fry for a minute

Then add two spoons of Haitian soybean paste, pour a little light soy sauce, and continue to stir-fry! The one I put is spicy, but it depends on your preference.

Saute until the eggplant is completely soft, add a little bit! ! Pay attention to a little bit, a little bit of water! Then add salt and MSG according to your personal taste. Soybean paste and soy sauce are inherently salty, so be careful when adding salt. It’s okay to taste it first before adding the seasoning!
