Potato fried rice
Overview
I like potatoes no matter how I cook them, stir-fry them into rice, it’s simple and delicious!

Peel and wash potatoes

Cut into cubes

Pour enough water into the pot, add diced potatoes and cook until cooked

Shred ginger and mince green onion

Then add colorful beans (including corn kernels, green peas, and diced carrots), cook for about 2 minutes, and drain

Pour appropriate amount of oil into the pot, add minced ginger and stir-fry until fragrant

Add rice and stir-fry
-
Add potatoes, colored beans, salt, stir well
-
Add the pickled vegetables (you can leave them out if you don’t have them)

Add minced green onions and stir-fry evenly,

Remove from the pot, put on a plate, and garnish with green onions and corn kernels, as shown in the picture!

Paired with a cup of milky corn juice, it’s very good😸
