Spicy Dried Whitebait
Overview
Whitebait is a good thing, and I usually buy fresh scrambled eggs to eat. This time, the dried whitebait was given by relatives during the Chinese New Year. I had never prepared dried whitebait, so I went online to find ways to make it. I fell in love with this recipe of spicy dried whitebait at first glance. My husband and I both prefer Sichuan cuisine, but we have little ones at home, so we are more cautious about adding chili peppers in the dishes. But when this dried fish was cooked, I didn’t expect Xiao Nizi to be able to chew several of them. To be honest, it’s really spicy. I’ll be careful to remove the chili seeds next time I make it. But it goes well with rice or porridge. Children who can tolerate spicy food can definitely eat it as a snack. It’s very enjoyable. The most important thing is that it’s crispy, salty and delicious. It’s really delicious.

Rinse dried whitebait;

Soak in appropriate amount of water for 5 minutes. Do not soak until it is too soft;

Cut the ginger and garlic into mince, cut the green onion into flowers, and dice the dried chili pepper and set aside;

Add oil to the hot pot, add more oil than usual when cooking, drain the water from the whitebait, put it into the pot and stir-fry over low heat;

Stir-fry the fish until golden and crispy, add a small spoonful of cooking wine, stir well and serve out;

Take another pot, add oil, add ginger, garlic and dried chili pepper and stir-fry until fragrant;
