Crystal shrimp jelly

The crystal clear crystal shrimp jelly is made with fish gelatin powder and fresh shrimps. It has a unique taste when eaten with sauce.

Wash the shrimps, remove the heads, shells and devein, leaving the tails, and cut the backs of the shrimps with a knife.

Insert each shrimp tail toward the belly.

Add a little salt and a small spoonful of cooking wine, appropriate amount of pepper, mix well and marinate for ten minutes.

Pour an appropriate amount of water and ginger slices into a small pot and bring to a boil. Blanch the shrimps and remove.

Take a small basin, add 250 ml of cold water and 20 grams of isinglass powder, stir in hot water until the isinglass powder melts.

Prepare 9 egg tart molds. (You can use a deeper spoon if you don’t have a tart mold)

Place the blanched shrimps into the tart mold.

Pour in the melted isinglass powder water and refrigerate for more than an hour until solidified.

After the solidification, the finished product can be served with your favorite sauce. It is light and delicious.
