Lovely pineapple cake

I have always liked eating pineapple cakes, and finally tried making them myself. The ones I made are healthier and more delicious! 😜It’s crispy and fragrant in every bite, and it’s just the right amount of deliciousness combined with the freshly brewed pineapple filling! (The following ingredients can make 15 pieces)

Peel the winter melon and pineapple.

Cut the winter melon into chunks and cut the pineapple at the same time. (You can choose any size, you need to squeeze the juice later)

Boil the water and cook the winter melon until it becomes translucent. Spare

Squeeze the juice of the sliced pineapple and boiled winter melon separately.

Classify pineapple juice, pineapple pulp, and winter melon pulp. (The juiced pineapple and winter melon become like ice)

Heat the pot over medium heat and add cane sugar and white sugar.

Add half of the pineapple juice and stir-fry until the sugar melts.

Then add pineapple and winter melon pulp.

Turn to low heat and stir-fry constantly to avoid burning.

Fry for about half an hour until the water becomes less. Continue to stir-fry. (The process is very difficult, I have to hold a stool and watch the frying😂)

Fry until sticky and dark in color, remove from the pot and transfer to a bowl and set aside. (The total process takes almost an hour)

Soften butter at room temperature, add icing sugar and beat. (If you use unsalted butter, add some salt)

Beat until pale, add eggs and continue beating.

After the final whipping is complete, sift in the flour and milk powder.

Mix gently with a spatula.

Gently form into a dough and set aside.

Divide the dough and pineapple into pieces and divide them into grams. Press 15 and calculate the number of grams yourself.

Then flatten the dough slightly and wrap the pineapple filling.

After everything is wrapped, start putting them into the mold one by one.

Try your best to fill in the corners and make the skin smooth. Appropriate props can be borrowed.

Preheat the oven to 170 degrees and bake for about 15 minutes.

It’s out! Once baked and cooled, the mold will naturally fall off.
