Wash the scallops, add a little cooking wine and steam for half an hour

Wash and shred the cabbage and mushroom stems and set aside (I forgot to take a photo of the mushroom stems)

Soak the vermicelli in hot water for 1 minute, then pour out the hot water, add cold water and soak for 5 minutes, pour out the water, add oil and mix well (you can use scissors to cut the vermicelli into small pieces, which will make it easier to fry)

After the scallops are steamed, smash them into pieces with the back of a knife

Heat the oil in the pan, stir-fry the scallops until fragrant, set aside

Reheat the oil pan, break in the eggs and beat them with chopsticks

Add cabbage and shredded mushroom stalks and stir-fry until cooked

Pour in the vermicelli and shredded scallops and stir-fry for a while (the vermicelli will become soft after soaking in hot water, so you don’t need to fry for a long time)

Add seasonings and serve
