Wash the fresh spine and blanch it in a pot.

Prepare the ingredients: onions, star anise, ginger, dried chili peppers, cinnamon, bay leaves, soybean paste, sweet noodle paste, rock sugar, dark soy sauce, light soy sauce, and salt!

Blanch the washed bones in cold water and pour in cooking wine, ginger slices, and green onions. Skim off the scum, fish it out and set aside.

First pour in rock sugar and stir-fry until it melts. Add the ingredients you just prepared into the pot and stir-fry until fragrant. Then add water.

Put the bones into the soup, add water until the bones are covered, cover the lid, and start slurping~

Simmer over medium heat for about an hour and a half. The soup will thicken and the meat on the bones has become tender. It is ready to be taken out of the pot~
