French fruit gummies
Overview
French candies are generally made by boiling fresh fruit puree with sugar to make it thick, and then using natural pectin to solidify it into soft candies. In ancient France, this was also a way to store fruit. In order to digest the jam I made myself, this time I used cherry jam and strawberry jam to make two kinds of French fruit gummies!

Put the cherry jam into a small pot and cook over low heat

Mix apple pectin with 20 grams of sugar

Mix 2 grams of lemon crisp and 3 grams of cold water and set aside

When the jam is cooked to about 40 degrees, add the apple gum mixture and sugar, stir and cook

Continue stirring and heat until boiling then add syrup

Add 50 grams of granulated sugar and continue to stir and heat. The remaining 30 grams are used for final coating

Cook until it reaches 107 degrees and remove from heat

Add citric acid water and mix well

Pour it into a container quickly while it's hot. I don't have a candy mold, so I put it in a crisper with plastic wrap for easy removal

After cooling, cut into small pieces

Put the cut pieces into a bowl of sugar and coat with sugar
