Prepare all materials and tools: rolling pin, PVC gloves, electronic scale. Preheat the oven to 170°.

Put all the ingredients for the water and oil dough into a plate and knead until it forms a smooth surface.

Place in a plate, cover with plastic wrap and ferment at room temperature for about 1 hour or more until the volume doubles in size.

Take out the dough, pat the dough to release the air, roll it into a round shape, and place it on the work mat to rest for about 15 minutes.

Prepare all ingredients for pastry.

Mix evenly and form into a round shape and set aside.

Roll out the water-oil dough into a rectangle with a thickness of about 2mm. Wrap it in the pastry and fold it in half. Continue rolling it into a rectangle of 2mm. Repeat this 2 times and roll it out to 2mm for the last time.

Use a knife to cut into squares or rectangles, place on a baking sheet and cover with a layer of plastic wrap to ferment until twice as thick, then bake in a preheated oven at 170° for 15 minutes until golden brown.
