Buy a bag of Sichuan fish sauerkraut (1.2 yuan). If you like it, you can buy more. Wash it and cut it into sections. Prepare onions, ginger, garlic and peppers as shown in the picture!

The ingredients as shown in the picture are onion, ginger, garlic, chili pepper, Sichuan peppercorns, and chopped mustard. They will be used to add oil at the end!

These are the fish bones left after processing the herring, which are washed and used to make soup.

Add the cut fish fillets into the cooking wine, black pepper, starch, egg white, and salt, stir well and set aside.

Prepare some enoki mushrooms according to your own preferences. If you like it, you can omit it to make the soup fresher!

After frying, add an appropriate amount of water, put in the fish bones, and start to cook the tofu over high heat. After the water boils, turn to low heat and slowly simmer until the white soup comes out!

After stewing, add appropriate amount of salt, add enoki mushrooms and cook for a while, then add fish fillets.

Do not stir the added fish fillets, wait until they turn milky white as shown in the picture, then turn off the heat and take out the pan!
