Wash and peel lotus root.

Shred.

Add some vinegar to clean water and soak the lotus roots.

Shred the tenderloin.

Shred the red pepper as well.

Have all ingredients ready.

Heat the pan and add some oil, then cut the tenderloin shreds into the hot pan and cool the oil.

Add onion, ginger and garlic and saute until fragrant.
