  1. Prepare the ingredients: 1 piece of fish (we eat seabass here in Taiwan, and there are more catfish, which is also suitable for steaming) 1 green onion, 1 coriander, 1 small piece of ginger, 1 red pepper, 2 garlic cloves (optional)

  2. Wash the fish, use kitchen paper to absorb the water from the fish, and lightly cut a few cuts on the fish (the fish is a bit thick, so this method is convenient for heating quickly). Cut the white onions into sections, cut the green onions into chopped green onions, shred the ginger, dice the red pepper, and cut the garlic cloves into minced garlic (because there are only two people to eat, in order not to waste, only steam half of it. I will not describe the removal of fish scales)

  3. Put the fish on a plate, add scallions and a little shredded ginger, put it into the boiling water, cover the pot, and start steaming over high heat

After 4 minutes, open the lid and add shredded ginger and red pepper, steam for another 4 minutes, remove the green onion, and sprinkle with chopped green onion and coriander (the steaming time depends on how small the fish is. Generally, the total time of steaming the fish is 8 to 15 minutes. If the time is too short, the fish will not be cooked, and if the time is too long, the fish will become old)

  5. Make sure there is no water in the pot, put 1 tbsp oil on low heat, add minced garlic (optional), 1 tbsp soy sauce and 1/5 tsp salt, bring to a boil and pour on the steamed fish
