Stir-fried beef with oyster sauce

Beef appears quite frequently on our family’s dinner table. It’s usually pickled pepper beef, pickled bamboo shoot beef or pickled cabbage beef. Let’s try the Cantonese style today!

Wash fresh and tender beef (loin fillet is more tender).

Cut into thin strips, add a little shredded ginger, cooking wine, sesame oil, and light soy sauce.

Mix well with chopsticks, add a little vegetable oil, mix well and marinate for five minutes.

When marinating the shredded beef, wash the green and red peppers and cucumbers and cut them into rings, slices or shreds of your choice.

Starch the shredded beef. (Put an appropriate amount of dry starch and an appropriate amount of water, mix thoroughly and then sizing), then pour some vegetable oil to lock in the moisture of the beef. The fried beef will be very tender and will not stick to the pan easily during frying.

Heat the oil in a pot, use chopsticks to break up the shredded beef into the pot, and quickly slice it apart.

After picking them all, turn off the heat, spread them with chopsticks until they change color, and put them on a plate, leaving the base oil.

Continue to turn on the heat, add the green and red peppers and stir-fry.

Pour in shredded cucumber, sprinkle with a little salt and stir-fry evenly, then add shredded beef.

Pour in oyster sauce and stir-fry for one minute (about three tablespoons of soup, rich flavor)
