Eggplant with minced meat
Overview
There are many ways to make eggplant, and my favorite is this eggplant with minced meat. It is fragrant and goes well with rice, and because of the addition of red pepper and chives, it not only looks beautiful, but also feels comfortable to eat.

Wash the long eggplants, cut them into long strips and soak them in water for a while.

Chop the pork belly into small pieces. Dice the red pepper and set aside.

Heat oil in a pan, add garlic, ginger, and scallions and sauté until fragrant.

Add minced meat, salt, and a little cooking wine and stir-fry. When cooked, place on a plate and set aside.

Heat oil in another pan, add red pepper and stir-fry.

Add eggplant and salt and stir-fry.

Stir-fry the eggplant until it is 8 ripe, add minced meat and stir-fry together. Add light soy sauce and stir-fry evenly.

Add chopped green onion and chicken essence and take out.
