Potato flour skin
Overview
My aunt grew her own potatoes, crushed them with a machine and filtered out the potato flour. After drying, she gave me a big bag. In addition to being used for making starch, I also use it to spread it into cakes and fry it to eat. You can add ingredients as you like without affecting the chewy texture. It is super delicious with rice.

Prepare potato flour.

Add appropriate amount of water to the potato flour and mix well, then break in an egg and beat evenly.

Brush the pan with oil, scoop a spoonful of batter into it and shake it until it covers the bottom of the pan, and spread it until both sides are brown.

Let cool and then slice.

Slice mushrooms and cut leeks into sections and set aside.

Cut ham into small pieces

Put an appropriate amount of oil in the pan and fry the ham slices until both sides are brown.

Set aside, saute garlic slices until fragrant, add mushrooms and stir-fry until soft.

Add the cut potato flour skin and stir-fry, adjust salt and light soy sauce.

Add the leeks and stir-fry evenly before serving.
