Overview

I used to treat them as weeds, but today I saw the farm workers weeding them, so I took a photo and sent it to ask if it was purslane. My friends all said yes, so I quickly asked the workers to send some back and picked some to eat cold. But dad obviously doesn’t like to eat it mixed like this. He prefers to blanch it and eat it dipped in garlic sauce.

  1. Pick the tender core of the purslane and pick it clean.

  2. Sit in a pot to boil water and blanch the purslane.

  3. Smash the garlic cloves, put them into a small bowl and mash them with a rolling pin, then add some pure water and stir into garlic juice.

  4. Squeeze the water out of the purslane and put it into a clean basin, add a little spicy oil, soy sauce, sesame oil, salt, monosodium glutamate and garlic juice and stir evenly.

  5. Plate and serve.
