Overview

It’s almost Chinese New Year and I like desserts. I made some nougat, which is made with egg white in the traditional way. It tastes great! It doesn’t stick to your teeth at all.

  1. Water maltose syrup for later use

  2. White sugar, water maltose syrup, water, weigh together and set aside

  3. Bake the peanuts in the oven at 150° for 10 minutes, take them out and pick out the red skin

  4. Peeled peanut kernels for later use

  5. Set the fire to low and slowly simmer the syrup

  6. Use chopsticks to pick a drop of syrup into cold water and instantly solidify into hard sugar beads, proving that the syrup is ready

  7. Halfway through boiling the syrup, beat one egg white with a whisk at high speed until it forms a sharp peak and set aside

  8. Pour the boiled syrup into the egg whites while it is still hot and continue to beat

  9. Just make the syrup extra strong

  10. Stir in peanuts, pour into a baking pan lined with greaseproof paper, flatten and let cool
