Steps
-
Put water, salt, sugar and oil into the pot and stir evenly
-
Weigh out the appropriate amount of cake flour
-
Heat the mixed liquid in a pot over medium heat until it boils, then reduce to low heat.
-
Pour in all the flour
-
Stir quickly to combine the flour and water. Keep stirring until the pan is non-stick, then turn off the heat.
-
Beat the batter to cool it down, cool it down until it is not too hot, and start adding the beaten egg liquid. Add in portions, stirring each time until all the egg liquid is absorbed into the batter, then add the next portion
-
When the batter is stirred up and an inverted triangle appears, as shown in the picture, the batter is ready
-
Put the batter into a piping bag
-
Pour onto a baking sheet lined with greaseproof paper, paying attention to the distance as the puffs will expand. Using the bottom of a spoon, dip some water into it and smooth out the small sharp corners on the batter. Preheat the oven to 210 degrees with upper and lower heat
-
Place in preheated oven. Heat up and down at 210 degrees for 10 minutes. After the puffs swell, change the heat to 180 degrees for about 20 minutes. The surface of the puffs is yellowish brown. Always observe. Do not open the oven during baking.
