Soak the dried squid an hour or two in advance and cut into the shapes you like.

Wash and cut the bitter bamboo shoots or sour bamboo shoots.

Heat oil in a pan, add ginger slices, dried squid, oil, salt and other ingredients.

Add the seasonings and stir-fry some water to add the flavour.

Add in the bitter bamboo shoots or sour bamboo shoots and stir-fry together.

Stir-fry together for five or six minutes, cover the pot and simmer for one minute.

Simmer until the water is dry and the juice is collected, then remove from the pot.
