Cranberry Soft Cookies
Overview
After Qingming Festival, when my cousin was still in Beijing, he said he would make cranberry cookies. One day in advance, my cousin and I sat at the dining table and picked out the dried cranberries, washed them and dried them. But something unexpected happened, and the floor at home was suddenly re-paved in some areas the next day, so the trip could not take place. It’s another public holiday - May Day. Since I don’t like hard cookies, I made them into cranberry soft cookies. My cousin can’t eat anymore, so I’ll go to my aunt’s house on May Day and let her taste it!

Dissolve 40g brown sugar with 50g hot water and let cool;

Pour 50g of vegetable oil into a larger container first, then pour in the cooled brown sugar water, and finally add 1g of salt and stir evenly;

Sift 100g low-gluten flour and 3g baking powder directly into the liquid container that has been stirred evenly;

Put it into an oven preheated to 180 degrees Celsius, middle layer, and heat up and down for 12 minutes.
