Grid Double Fruit Pie
Overview
I originally wanted to make a simple apple pie, but when I was preparing the filling, I finished peeling two apples. I turned around and saw that there were pears, so I added some in as well, and it was particularly sweet, so this double-fruit pie was born~

Peel the apples and pears, cut into small cubes and put them in a bowl.

First put 5g of butter in the pot and melt over low heat.

When the butter turns slightly brown, add the diced fruit pulp.

After the pulp is ripe, add 10g of white sugar. Slowly cook the pulp over medium heat, the diced pulp will release moisture.

After the water slowly reduces, add 2g of table salt and squeeze in a little lemon juice.

Finally collect the juice.

Sprinkle in a little bread crumbs, mix evenly, and the pie filling is ready. (The bread crumbs are added to absorb the remaining moisture in the pulp.)

Next, make the pie crust: sift the cake flour, the remaining 2g of salt and 10g of granulated sugar.

Cut the remaining 10g of butter into small cubes and add it.

Knead with your hands into coarse corn kernels.

Add water and knead into dough.

Place in the refrigerator to rest for about 1 hour.

Take out the rested dough and roll it out into a sheet.

Place the dough sheet into the mold and use a rolling pin to break off any excess around it.

Use a fork to poke some holes in the bottom.

Add pie filling.

Continue to roll out the remaining dough.

Cut into strips of noodles.

Arrange pie crust in vertical strips.

For every other pie crust, flip it over and lay the first pie crust across the top.

After placing the horizontal pie crust, put the turned-down vertical pie crust back.

Then flip up the vertical bar that is pressed down by the horizontal bar.

Place the second horizontal bar.

Put the pie crust down and stand it upright.

By analogy, the grid is compiled and the redundant parts are removed. (The grid I summarized is to flip up the vertical bars pressed by the horizontal bars, and then put another horizontal bar. I wonder if everyone can understand it?)

Apply a layer of egg wash.

Preheat the oven to 200 degrees for 10 minutes. Then turn the heat up and down 180 degrees for 20 minutes.
