Chocolate Lava Cake
Overview
This chocolate lava cake is very simple. The key lies in the heat. If the heat is higher, the inside will be solid. If the heat is lower, it will not be shaped. I went to the pastry shop to check it out. I felt that I was very satisfied with the heat. It was neither too liquid nor dry. If you like it, just take a look. I used Junzhi’s recipe:

Prepare all materials

Make hot water in a pot

Melt chocolate and butter over water. I used half of the chocolate with 70% cocoa butter and the other with 35% milk cocoa butter chocolate

When melted, add sugar and stir. When melted, turn off the heat and take it out.

Add a whole egg and an egg yolk and beat until foamy

Add to chocolate

Mix well

Sift in flour

Mix well

Put the batter into a piping bag

Squeeze into the mold

Turn the heat up and down to 220 degrees and bake for 8 minutes. If you like it to be more fluid, bake for 6 minutes. If you like it to be more mature, bake for 10 minutes.

Take out of the pot

Sprinkle some cocoa powder on the surface and cut into pieces, as shown in the picture
