I originally planned to do it during the Chinese New Year. But that day I heard from a pork seller that the price of pork would rise during the New Year. So I thought I would eat anyway. Choose Zhimeizhai’s sweet vinegar.

Peel and cut the ginger into large pieces and set aside.

Wash the pig's trotters and blanch them in water to remove the oil
