Choose papayas with a slightly yellow skin. Do not use papayas that are all green or all yellow (all green will be unripe and taste astringent, while all yellow will be too soft and overripe, and will not taste crispy)

Peel the outer skin of the papaya and remove the seeds from the inner flesh

Prepare white vinegar, salt, sugar, chili pepper, and a few cloves of garlic
